Kale Chips

1 bunch kale
1 Tbsp. Olive Oil
1 Tbsp. Lemon Juice or Lemon Zest (optional)
Sea salt to taste


De-rib the kale. Put in a plastic bag or bowl and toss with olive oil and lemon to coat. Lay out the flat leaves on a cookie sheet and sprinkle with sea salt.

Bake for 30 minutes at 250 degrees, until dry, crisp and flat. (I've also seen 350 degrees for 15 minutes, but haven't done it that way.)

  1. I just tried the chips, they are fantastic. I also tried a batch with a few extra ingredients (in addition to olive oil, salt and lemon) powdered garlic and rosemary; another with cayenne pepper and powdered onion. I also tried a batch with curry....that one didn't work well. Thanks, what a great idea, I never know what to do with kale but soup.
